Pumpkin Hemp Pancakes

Mix the following for pancake mix:

1/2 cup coconut flour

1/4 cup vanilla hemp protein powder

1/4 cup sweetener (or honey or maple syrup for a paleo version)

1 tsp baking powder

1 tsp cinnamon

1/2 tsp salt

1/2 tsp ginger

1/4 tsp cloves

6 large eggs

1/2 cup pumpkin puree

3 tbsp Kelapo coconut oil, melted

1/2 to 3/4 cup unsweetened coconut milk or almond milk

1/2 tsp vanilla extract

Coconut oil for the pan

Gooey Fudge Brownies

Preheat oven to 350 degrees

Grease and flour 8"x8" pan or line with parchment paper

1 cup Northumberland Hemp Flour

3/4 Cup Cocoa

1/4 teaspoon of salt

2/3 cup Northumberland Hemp Oil

1 cup cugar

1 tablespoon vanilla

3 eggs

3/4 cups chocolate chips

First, mix the hemp flour, cocoa, and salt together.

In a separate bowl, mix together the hemp oil, sugar, and vanilla.  Add each egg one at a time and stir until combined... don't over mix!

Combine the dry and wet mixture.

Pour batter into the prepared pan and sprinkle the chocolate chips on top.

Bake for 35-45 minutes.  Insert a toothpick to test if moist crumbs come out when removed... brownies will continue to cook as they cool.

Cool completely, cover, and store at room temperature for up to four days.

Refrigerating the brownies will give a fudge-ier texture!
